Nice report & photos, Stefaan. Even with the 737ng's I do pretty much a manual descent using the old 3-1 rule. Say I am flying at FL380 and I need to descend to 8000 feet, then drop the zeros, 38-8=30, then 3 X 30=90. So I would start the descent at 90 miles out. If I have a tailwind I would add miles and a headwind I would subtract miles. Sometimes VNAV just is not real accurate on descents and manual mode gives me sometime to do! LOL I also do some manual climb outs, but on departures it can keep you pretty busy at large airports so VNAV/LNAV can be a big help for a pilot that is about 76 years young!
